Sweet sticky pork with garlic and chive rice

Sticky sweet pork made with Indonesian kecap manis and brown sugar.
Ingredients:
  • 200.00 gm jasmine rice
  • 2cm piece fresh ginger, peeled, finely grated
  • 40.00 ml kecap manis
  • 21.00 gm soy sauce
  • 16.00 gm brown sugar
  • 2 garlic cloves, crushed
  • 500g pork schnitzel (uncrumbed)
  • 1 bunch fresh chives, cut into 2cm lengths
  • Steamed Asian greens, to serve
Instructions:
  • In a large microwave-safe container, combine the rice and 2 cups of cold water. Cover and microwave on high for 13 minutes or until the rice is tender. Let it cool before using.
  • In a small bowl, mix together ginger, kecap manis, soy sauce, brown sugar, and half of the garlic. Heat half of the oil in a large frying pan over medium-high heat. Sear the pork for 1 minute on each side until lightly browned. Transfer the pork to a plate and loosely cover with foil to keep warm.
  • Combine the soy mixture and 1/2 cup of cold water in a pan and bring to a boil. Lower the heat to medium and simmer for 3 to 4 minutes until reduced by half. Add the pork and its juices back to the pan, toss to coat, and simmer for 1 to 2 minutes until heated through. Transfer the pork to a cutting board, slice, and return to the flavorful sauce. Serve and enjoy!
  • In a wok or frying pan, heat the remaining oil over medium-high heat. Add the rice and remaining garlic, season with salt, and cook for 4 to 5 minutes until the rice is hot. Sprinkle with chives, then spoon the rice onto a serving plate and top with the pork mixture. Serve alongside steamed Asian greens.
