Sticky pork with zucchini noodles recipe

Indulgent marinated sweet and sticky pork with zucchini noodles, crisp veggies, and aromatic herbs - under 500 calories!
Ingredients:
  • 40.00 ml kecap manis
  • 12.80 gm coconut sugar
  • 500g pork fillet, thinly sliced
  • 16.80 gm coconut oil
  • 1 red onion, cut into thin wedges
  • 1 bunch broccolini, halved
  • 4cm piece fresh ginger, peeled, cut into matchsticks
  • 2 garlic cloves, thinly sliced
  • 1 stick lemongrass, white part only, finely chopped
  • 1 long fresh red chilli, thinly sliced
  • 200g snow peas, trimmed
  • 500g zucchini, cut into noodles using a spiraliser
  • 1 small bunch fresh Thai basil or coriander, leaves picked
  • Lime halves, to serve
Instructions:
  • In a glass or ceramic bowl, mix together the kecap manis, sugar, and fish sauce. Add the pork and toss to coat. Let marinate for 15 minutes or up to 1 day.
  • Separate pork from marinade, keeping the marinade for later. In a hot wok, heat 1 tsp oil and cook half of the pork until golden (1-2 minutes). Set aside in a bowl. Repeat with another 1 tsp oil and the rest of the pork.
  • Heat the remaining oil in a wok over high heat. Stir-fry onion and broccolini stems for 1 minute. Add broccolini florets, ginger, garlic, lemongrass, and chili. Stir-fry for 30 seconds until fragrant. Pour in the reserved marinade and cook until vegetables are tender-crisp. Toss in snow peas and stir-fry for another 30 seconds. Add zucchini noodles and stir-fry for an additional minute until well combined and just tender. Remove from heat and enjoy!
  • Mix in half of the fragrant Thai basil leaves, then garnish with the remaining Thai basil before serving with lime halves.
