Quick and flavorful pork noodle salad loaded with fresh veggies for a busy day.
Ingredients:
  • 65.63 gm soy sauce
  • 89.38 gm honey
  • 43.20 gm hoisin sauce
  • 600g pork fillet, trimmed
  • canola oil cooking spray
  • 250g packet dried rice-stick noodles
  • 1 medium carrot, peeled, cut into thin ribbons
  • 1 Lebanese cucumber, halved, deseeded, thinly sliced
  • 250.00 ml fresh coriander leaves
  • 42.00 gm lime juice
  • 44.00 gm sweet chilli sauce
Instructions:
  • In a glass or ceramic dish, mix together soy sauce, honey, hoisin sauce, and sesame oil. Add the pork and coat it well. Cover and refrigerate for at least 2 hours, or overnight for best results.
  • Coat a frying pan with oil and heat over medium-high heat. Sear the pork, turning occasionally, for 10 minutes or until fully cooked.
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them stand for 8 to 10 minutes until softened. Drain and rinse under cold water.
  • In a large bowl, mix together noodles, carrot, cucumber, coriander, and lime juice. Thinly slice the pork and add it to the noodle mixture. Toss everything together to combine. Drizzle with sweet chili sauce and serve.
