Whip up a vibrant Mediterranean veggie salad with microwave rice for a quick and filling meal. Prep ahead for a fresh and crunchy office lunch option soaked in tangy sauce.
Ingredients:
  • 450g pkt microwave brown rice
  • 250g pkt microwave brown rice
  • 250g green beans, cut into 2cm lengths
  • 2 x 400g can chickpeas, rinsed, drained
  • 2 x 200g punnets grape tomatoes, quartered
  • 3 Lebanese cucumbers, finely chopped
  • 1 large red capsicum, deseeded, finely chopped
  • 1 red onion, finely chopped
  • 80g (1/2 cup) pitted black olives, sliced
  • 165.00 ml coarsely chopped fresh dill
  • 300g feta, cut into 1.5cm cubes
  • 60ml (1/4 cup) extra virgin olive oil
  • 11.80 gm Dijon mustard
Instructions:
  • Cook both packets of rice in the microwave according to packet instructions, then transfer to a large bowl and allow to cool completely.
  • While you wait, bring a small saucepan of salted water to a boil over high heat. Cook the beans for 1-2 minutes until they turn bright green and are just tender. Drain and immediately rinse under cold water. Let them cool completely.
  • For the lemon dressing, simply combine all ingredients in a sealed jar. Shake vigorously until perfectly blended, then season to taste.
  • Combine beans, chickpeas, tomato, cucumber, capsicum, onion, and olives with the rice mixture. Toss until everything is well mixed. Drizzle in the dressing and most of the dill, tossing again until combined. Gently fold in the feta. Serve sprinkled with the remaining dill.
