Easy falafel snack bowls with Qukes and baby capsicums are the ultimate no-fuss treat.
Ingredients:
  • 250g Qukes baby cucumbers, halved lengthways
  • 200g Sweet Solanato Tomatoes
  • 175g Minicaps baby capsicums, halved
  • 100g hummus dip
  • 100g beetroot dip
  • 250.00 ml purchased tabouli, (see tip)
  • 250g purchased falafel, sliced
  • 100g feta, cut into cubes
  • 54.60 gm extra virgin olive oil
  • 1 small lemon, juiced
  • 1/2 teaspon caster sugar
  • Baked lebanese bread, to serve
Instructions:
  • Mix the hummus and beetroot dip, then spread it into the bottom of 4 lunchbox or snack bowls. Top with baby cucumbers, tomatoes, baby capsicums, tabouli, and falafel. Sprinkle feta over the bowls and season with pepper.
  • Mix together the oil, lemon juice, sugar, and seasonings. Transfer the dressing to a separate container for easy transport. Drizzle the dressing over the dish just before serving. Enjoy with baked Lebanese bread and lemon wedges.
