Whip up delicious Middle Eastern wraps with falafel, hummus, and tabbouleh for a quick and healthy dinner option!
Ingredients:
  • 200g packet felafel mix (see note)
  • vegetable oil, for shallow-frying
  • 4 sheets lavash bread or mountain bread
  • 82.50 ml hommus dip
  • 62.50 ml burghul (cracked wheat)
  • 250.00 ml flat-leaf parsley leaves, chopped
  • 62.50 ml mint leaves, chopped
  • 1 tomato, chopped
  • 1/2 small white onion, finely chopped
  • 1/2 lemon, juiced
Instructions:
  • For tabouli: Soak burghul in cold water for 15 minutes, then drain and press out excess water. Combine it in a large bowl with parsley, mint, tomato, onion, olive oil, and 2 tablespoons lemon juice. Mix well, and season with salt and pepper.
  • Prepare the falafel according to the packet instructions by shaping the mixture into 16 balls. Heat vegetable oil in a non-stick frying pan over medium heat. Cook the falafel in batches, turning frequently, for about 4 minutes until they are golden and heated through. Drain on paper towels before serving.
  • Spread a lavish amount of creamy hummus on each lavash sheet. Add a generous sprinkle of vibrant tabouli on one end of the sheet. Place four crispy falafels on top. Season with a pinch of salt and a dash of pepper. Roll up the lavash tightly. Repeat the process with the rest of the ingredients. Serve and enjoy!
