Try this tasty and speedy falafel and black rice tabouli bowl for a flavorful vegetarian meal on the go.
Ingredients:
  • 250g packet microwave black rice
  • 1 small lemon, juiced
  • 36.40 gm extra virgin olive oil
  • 1 garlic clove, crushed
  • Large pinch brown sugar
  • 2 bunches fresh mint, leaves picked
  • 1 bunch fresh continental parsley, leaves picked
  • 2 truss tomatoes, finely chopped
  • 1/2 small red onion, finely chopped
  • 150g (1 cup) baby peas, blanched
  • 225g packet fresh falafel
  • 200g carton hummus
  • Ground cumin, to serve
  • Mixed nuts and seeds, toasted, to serve (optional)
Instructions:
  • Prepare the rice according to the package instructions, then transfer it to a spacious bowl and set it aside.
  • In a bowl, whisk together the juice, oil, garlic, and sugar. Season to taste. Set aside a few small mint sprigs. Chop the parsley and the rest of the mint. Combine the chopped mint, parsley, tomato, onion, and peas with the rice. Drizzle the lemon dressing over the mixture and toss well to combine. Serve in individual bowls and garnish with the reserved mint sprigs.
  • Cook the falafel according to the instructions on the packet. Plate the tabouli, then top with the cooked falafel, hummus, and reserved mint sprigs. Sprinkle with cumin and nuts and seeds, if desired.
