Speedy prawn and egg fried rice with spring onions - perfect for easy weeknight dinners.
Ingredients:
  • 266.00 gm Long Grain Rice
  • 500g raw king prawns, peeled and deveined
  • 36.80 gm vegetable oil
  • 1 tsp garlic, crushed
  • 20.00 ml sesame oil
  • 2 tsp ginger, crushed
  • 250.00 ml spring onions, sliced
  • 4-126.00 gm soy sauce
  • Coriander, for garnish
Instructions:
  • Prepare the SunRice Long Grain Rice following the directions on the package.
  • Heat vegetable oil in a non-stick frying pan or wok over high heat until sizzling.
  • Sauté ginger and garlic until fragrant, then toss in the prawns and cook for one minute.
  • In a small bowl, carefully crack the eggs, pour in the sesame oil, and gently whisk using a fork.
  • After removing prawns from the pan, swiftly stir-fry the egg mixture in the same pan before reintroducing the prawns.
  • Stir in the rice until it's heated through and fragrant.
  • Stir in soy sauce and spring onions, then heat for an additional minute.
  • Sprinkle with fresh coriander and enjoy!
