Quick and versatile fried rice elevated with crispy duck for a gourmet touch.
Ingredients:
  • 1 Chinese BBQ duck (see Notes)
  • 3 tsp sesame oil
  • 2 eggs, beaten
  • 6 spring onions, finely shredded
  • 200g snow peas, finely shredded
  • 2 garlic cloves, finely chopped
  • 600.00 gm cooked white long-grain rice, cooled
  • 125.00 ml skinned orange segments
  • 20.00 ml orange zest
  • 42.00 gm light soy sauce
Instructions:
  • Preheat your oven to 150°C.
  • Carefully separate the succulent duck meat from the carcass, ensuring the crispy skin remains intact. Cut the meat into bite-size pieces. Dispose of the bones or freeze them for a flavorful stock. Arrange the duck in a baking dish, cover with foil, and heat in the oven until warmed through.
  • Heat 1 teaspoon of oil in a hot wok or frying pan. Cook the eggs until they form a fluffy omelette, gently folding and cutting into thin strips on a cutting board. Keep aside.
  • Heat the remaining oil in the wok over high heat until sizzling. Add spring onions, snow peas, and garlic, and stir-fry for 1 minute. Add the rice and cook until heated through. Incorporate the duck, egg strips, orange segments, zest, and soy sauce. Toss everything together well and serve hot.
