Try this irresistible special fried rice that's sure to impress any crowd.
Ingredients:
  • 300.00 gm white long-grain rice, rinsed
  • 3 tsp sesame oil
  • 2 eggs, lightly beaten
  • 18.20 gm peanut oil
  • 150g Chinese barbecued pork, chopped
  • 100g cooked prawns, peeled
  • 250.00 ml frozen baby peas, thawed
  • 3 eschallots, trimmed, thinly sliced
  • 42.00 gm soy sauce
Instructions:
  • Boil rice in a large saucepan as per packet instructions until just tender. Drain, rinse with cold water, spread on a tray, and refrigerate uncovered for 2 hours until dry.
  • Heat a large wok over medium heat until hot. Add 1 teaspoon of aromatic sesame oil and swirl it around to ensure it covers the base and sides. Pour in the egg and swirl it gently to cover the base and a bit of the side. Let it cook for about a minute or until it's nearly set. Slide the omelette onto a board, roll it up, and then thinly slice it.
  • Turn up the heat to high and pour the rest of the sesame oil and peanut oil into the wok. Swirl the oil around to cover the wok. Toss in the pork and prawns, stir-frying for 2 minutes until they are warmed up. Then add the rice and stir-fry for another minute. Mix in the peas, eschallots, and soy sauce, and stir-fry for 2 more minutes until everything is heated through. Serve by spooning the rice onto plates, topping with the omelette, and enjoy.
