Indulge in a guilt-free, perfect steak dinner at home with this healthy recipe.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 20.00 ml finely chopped fresh thyme leaves
  • 450g piece Australian beef flank steak
  • 1 large beetroot, peeled, cut into 1cm-wide sticks
  • 1 medium sweet potato, unpeeled, cut into 1cm-wide sticks
  • 1 large zucchini, cut into 1cm-wide sticks
  • 100g green beans, trimmed
  • 90g (⅓ cup) light Greek-style yoghurt
  • 11.80 gm wholegrain mustard
  • 1 small garlic clove, crushed
  • 2 tsp finely chopped fresh chives, plus extra, to serve
  • ½ tsp cracked black pepper
Instructions:
  • In a glass or ceramic bowl, mix together oil, thyme, and garlic. Season the mixture. Add the beef and toss to evenly coat in the marinade. Refrigerate for a minimum of 2 hours to marinate.
  • In the air fryer basket, arrange beetroot slices and coat with oil and seasoning. Air fry at 180C for 20 minutes. Then, add sweet potato and continue cooking for another 10 minutes. Finally, add zucchini and green beans and cook for an additional 10 minutes until vegetables are tender.
  • Allow the beef to rest at room temperature for 20 minutes.
  • Preheat a chargrill pan on high heat. Sear beef for 2 minutes on each side to your desired doneness. Place on a plate, lightly cover with foil, and let it rest for 10 minutes. Slice beef thinly against the grain.
  • In a jug, mix together all the sauce ingredients with 1 tbsp of water. Don't forget to season to taste.
  • Spread out the vegetable chips and beef on serving plates. Pour over the sauce and garnish with additional chives. Enjoy with a side salad.
