Elevate your lunch game with these irresistible green goddess hummus sandwiches - the ultimate healthy and delicious option for your weekly lunches!
Ingredients:
  • 200g Hommus Dip
  • 40.00 ml finely chopped chives
  • 40.00 ml finely chopped basil
  • 8 slices High Fibre Multigrain Sandwich Loaf
  • 4 oak leaf lettuce leaves
  • 120g fresh mozzarella or bocconcini, thickly sliced
  • 8 Perino tomatoes, sliced
  • 40g alfalfa sprout
  • 2 pickled onions, thinly sliced
  • 2 Lebanese cucumbers, peeled into ribbons
Instructions:
  • Mix together the hummus, lemon zest, chives, and basil in a bowl. Season to taste.
  • Lay out the bread slices on a clean surface. Spread them generously with the flavorful hommus mixture. Layer lettuce, mozzarella or bocconcini, tomato, sprouts, onion, and cucumber onto 4 slices of bread. Season the ingredients. Place the remaining slices of bread on top, hommus-side down. Slice in half before serving.
