Green goddess dip

Impress guests with this decadent green goddess dip.
Ingredients:
  • 500g broad beans
  • 1 avocado
  • 36.40 gm olive oil
  • 21.00 gm lemon juice
  • 1 garlic clove, crushed
  • 2 anchovies
  • 2 tsp finely chopped tarragon
  • Flatbread, to serve
  • Cherry tomatoes, to serve
  • Baby carrots, to serve
Instructions:
  • Place the beans in a heatproof bowl and cover them with boiling water. Let them stand for 2 minutes, then drain and remove the skins.
  • Simply combine the beans, avocado, garlic, oil, juice, anchovies, and tarragon in a food processor until smooth. Don't forget to season with your favorite spices. Transfer the mixture to a bowl and refrigerate until you're ready to enjoy it.
  • Accompany with flatbread, cherry tomatoes, and petite carrots.
