Egg, bread, goat cheese, and veggie strata - a hearty, versatile dish perfect for any occasion.
Ingredients:
  • 8 ounces (1/2 of a 1-pound loaf) sourdough bread
  • 2 tablespoons olive oil
  • 1 cup yellow onion, finely chopped
  • 1 pound cremini or button mushrooms, trimmed and quartered
  • 2 teaspoons salt, divided
  • 1 pound Brussels sprouts, trimmed and quartered
  • 2 teaspoons garlic, minced
  • 1 tablespoon fresh thyme leaves, chopped
  • Pinch crushed red chile flakes
  • 8 large eggs
  • 1 pint (2 cups) half-and-half
  • 1/2 teaspoon freshly ground black pepper
  • 6 ounces goat cheese, crumbled
Instructions:
  • Heat up your oven to 375℉
  • Prepare the bread cubes: Cut the bread into 1-inch cubes and arrange them in a single layer on a parchment-lined baking sheet. Toast in the oven until golden and crisp, for about 10 minutes.
  • Saute the veggies: Heat a large cast iron or oven-proof skillet over medium-high heat, then add oil. Saute onions until soft and translucent, about 3 minutes. Toss in mushrooms with 1/2 teaspoon salt, cook until tender and liquid is released, about 7 minutes. Add Brussels sprouts, another 1/2 teaspoon salt, cook until tender and pan is mostly dry, about 7 minutes. Stir in garlic, thyme, and crushed red pepper flakes, cook until fragrant, about 30 seconds.
  • Combine: Mix the toasted bread cubes into the skillet with the mushrooms and Brussels sprouts until well combined. Take the skillet off the heat and set aside.
  • Prepare the custard by combining eggs, half-and-half, 1 teaspoon salt, and pepper in a large mixing bowl and whisk until well blended.
  • Pour the silky custard over the aromatic bread blend, allowing it to soak for a minimum of 30 minutes. Gently mix occasionally for uniform distribution of the luscious custard. Sprinkle the crumbled goat cheese over the top of the strata for a delicious finish.
  • Place the skillet in the oven and bake the strata until it is puffed, golden brown, and set in the center, approximately 45 minutes.
  • Serve warm or at room temperature with a side salad or enjoy on its own.
