Create a flavorful roasted veggie medley with Brussels sprouts, broccoli, peppers, beans, onion, mushrooms, and potatoes, all tossed in garlic for an easy and delicious side.
Ingredients:
  • 1 small head broccoli, cut into florets
  • 1 medium red onion, quartered
  • 1 medium red potato, thinly sliced
  • 1 small red bell pepper, sliced
  • 1 small orange bell pepper, sliced
  • 8 fresh green beans, halved
  • 3 Brussels sprouts, cut into thirds
  • 2 medium fresh mushrooms, sliced
  • 5 cloves garlic, peeled
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon salt, or to taste
  • 0.125 teaspoon fresh lemon juice
  • 3 tablespoons olive oil, or to taste
Instructions:
  • Preheat the oven to a piping hot 450°F (230°C).
  • Combine broccoli, onion, potato, bell peppers, green beans, Brussels sprouts, mushrooms, and garlic in a baking dish. Season with pepper, salt, and lemon juice, then drizzle with olive oil and toss to coat evenly.
  • Roast in the preheated oven for 20 minutes, stirring halfway through, until tender.
