Garlic and thyme roasted beets elevate any salad. Simply roast in the oven for an easy and tasty addition.
Ingredients:
  • 4 large beets
  • 1.5 tablespoons olive oil
  • 1 tablespoon store-bought minced roasted garlic
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon honey, or to taste
Instructions:
  • Preheat the oven to a toasty 475 degrees F (245 degrees C) and elegantly line a shallow baking dish with foil.
  • Trim and discard the beet greens, then cut off the bottoms. Arrange the beets top-side up in the baking dish.
  • In a bowl, mix olive oil, garlic, balsamic vinegar, thyme, and honey, then drizzle the mixture over the beets. Finish by drizzling a little extra honey on top.
  • Roast in the preheated oven for 50-60 minutes until tender and caramelized. Once done, remove and let cool before peeling.
