Garlic bread ravioli recipe

Garlicky bread ravioli with creamy ricotta, spinach, and lemon filling, coated in aromatic garlic butter. Ready in 45 minutes, a crunchy and indulgent snack that will fill your kitchen with irresistible garlic bread aroma.
Ingredients:
  • 60g Baby Spinach
  • 130g (1/2 cup) Smooth Ricotta
  • 1/2 lemon, rind finely grated
  • Pinch ground nutmeg
  • 1 green shallot, thinly sliced
  • 16 slices White Bread
  • 1 egg, lightly whisked
  • 125g pkt garlic butter, melted
  • 20.00 ml chopped fresh continental parsley
Instructions:
  • Rinse the spinach thoroughly and transfer to a microwave-safe bowl. Cover with plastic wrap and microwave on HIGH for 1 minute, or until the spinach is wilted. Let it cool, then gently squeeze out excess water and chop.
  • In a bowl, mix together the spinach, ricotta, lemon zest, and nutmeg. Add in the shallot and stir well to combine. Season to taste.
  • Using a 9cm round cutter, cut out a disc from each slice of bread. Spoon ricotta mixture in the center of each disc. Brush edges with egg, top with another disc, and use a fork to press edges down to seal (be careful near the edges to prevent tearing).
  • Preheat the oven to 200C/180C fan forced and line a baking tray with baking paper. Arrange the ravioli on the tray, lightly spray with oil, and bake for 30 minutes until golden and crisp.
  • Mix the garlic butter and parsley in a bowl. Coat the top of each ravioli with the garlic butter and place them on a serving plate. Finish by drizzling any leftover butter mixture on top before serving. Check out our video for a visual guide on making this delicious Garlic Bread Ravioli.
