Georgian cheese bread with garlicky filling, topped with an egg on pizza dough. Perfect for brunch or weekend lunch, customizable fillings.
Ingredients:
  • 2 x 250g pre-made fresh pizza dough balls
  • 200g fresh ricotta, crumbled
  • 150g (1½ cups) pre-grated 3 cheese blend
  • 100g feta, crumbled
  • 60ml (¼ cup) thickened cream, plus extra, to brush
  • 20.00 ml chopped fresh continental parsley, plus extra, to serve
  • 20.00 ml chopped fresh chives, plus extra, to serve
  • 80g garlic butter, cut into 8 slices
Instructions:
  • Preheat oven to 200°C (180°C fan-forced).
  • Divide the dough balls in half. Roll out each half on a floured surface into an 18 x 28cm oval shape. Transfer each oval onto a piece of baking paper and let them rest for 15 minutes.
  • Prepare 2 baking trays with baking paper. Mix cheeses, cream, parsley, and chives in a bowl. Spread a quarter of the cheese mixture over one dough oval, leaving a 2cm border. Fold in the two sides to create a raised edge and twist the ends. Transfer to the lined tray. Repeat the process with the rest of the cheese mixture and dough.
  • Use a pastry brush to generously coat the edges with additional cream. Bake for 15 minutes until golden. Lightly press the filling to create a small well in the center. Crack an egg into each well and carefully place 2 slices of butter on top of each egg. Continue baking for an additional 5-7 minutes until the egg reaches your desired level of doneness.
  • Garnish with fresh parsley and chives, and serve with lemon wedges.
