Georgian Khachapuri: Cheesy, savory bread perfect for breakfast or parties.
Ingredients:
  • 4 cups all-purpose flour, divided
  • 4.5 teaspoons active dry yeast
  • 3.5 teaspoons white sugar
  • 2 teaspoons salt
  • 1 cup milk
  • 0.5 cup margarine
  • 1 pound shredded Muenster cheese, or more to taste
  • 1 egg
  • 1 egg, separated
Instructions:
  • In the bowl of a stand mixer fitted with the paddle attachment, mix together 2 cups of flour, yeast, sugar, and salt.
  • In a 1-quart saucepan, gently warm the milk and margarine over low heat until the milk is very warm and the margarine is mostly melted, approximately 5 minutes.
  • Blend the milk mixture into the flour mixture on low speed until just combined, then switch to medium speed and beat until smooth for about 2 minutes. Add the remaining 2 cups of flour and beat until a soft dough forms. Swap to the dough hook and knead the dough until it's smooth and elastic, approximately 10 minutes.
  • Place the dough in a greased bowl, ensuring it's coated all around. Cover and allow it to rise until doubled in size, approximately 1 hour.
  • Gently press dough to remove air. Allow to rise until doubled, approximately 45 minutes.
  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease a 9-inch round baking pan.
  • Lightly press down on the dough and shape it into a circle. Place it in the baking pan.
  • Combine Muenster cheese, egg, and egg yolk in a bowl. Spread the mixture over the dough in the baking pan, then gather the dough in 1 1/2-inch pleats. Gently squeeze the pleats together and twist to create a topknot.
  • Allow the dough to relax for 10 to 15 minutes, then brush it with egg white.
  • Bake until golden brown, about 1 hour in the preheated oven.
