Ingredients:
  • 1kg yellow squash, halved
  • 4 green shallots, ends trimmed, thinly sliced
Instructions:
  • Boil the squash in a large saucepan of water for 4-5 minutes until tender. Drain thoroughly.
  • In a large frying pan over medium heat, warm the oil. Sauté garlic until aromatic, about 30 seconds. Add squash and cook for 2 minutes until heated through. Toss in shallot and cook for 1 more minute. Serve in a bowl.
