Roasted garlic lamb with zesty lemon-dressed veggies.
Ingredients:
  • 900g butterflied leg of lamb
  • 6 garlic cloves, thinly sliced
  • 2 tsp dried oregano
  • 150g snow peas, trimmed
  • 250g squash, halved
  • 200g green beans, trimmed
  • Crusty bread, to serve
  • 65.63 gm lemon juice
  • 2 garlic cloves, crushed
  • 3 anchovy fillets, finely chopped
  • 62.50 ml finely chopped fresh flat-leaf parsley
  • 113.75 gm extra virgin olive oil
Instructions:
  • In a shallow glass dish, combine lamb, garlic, oil, and oregano, ensuring everything is coated evenly. Season with pepper to taste.
  • Preheat a hot barbecue with hood on high heat. Season lamb with salt and barbecue for 2-3 minutes on each side until browned. Transfer lamb to a stainless steel rack on the barbecue, close the hood, and cook on medium heat for 15-20 minutes, turning halfway through. Remove lamb to a serving plate, cover loosely with foil, and let it rest for 10 minutes. Barbecue snow peas for 3-4 minutes until tender. Serve and enjoy!
  • Prepare the Lemon dressing: Blend lemon juice, garlic, anchovies, and 2 tablespoons of parsley in a food processor until creamy. Mix in oil and the rest of the parsley. Season with salt and pepper to taste.
  • Steam squash and beans until tender. Drizzle lamb and vegetables with dressing and serve with crusty bread.
