Garlicky lamb chops with barbecued green beans

Delicious garlic lamb chops with BBQ green beans by Curtis Stone - perfect for a family meal.
Ingredients:
  • 75.08 gm extra-virgin olive oil, divided
  • 2 garlic cloves, finely chopped
  • 40.00 ml fresh oregano, coarsely chopped
  • 8 lamb loin chops (about 120g each)
  • 400g green beans, trimmed
  • 250g vine ripened cherry tomatoes, halved
  • Lemon wedges, for serving
Instructions:
  • Get the barbecue ready over medium-high heat. Combine 1/4 cup of oil, garlic, oregano, 1/2 teaspoon of sea salt flakes, and 1/4 teaspoon of freshly ground black pepper in a medium bowl, whisking them together.
  • Prepare the lamb chops by generously coating them with 2 tablespoons of flavorful oregano dressing and seasoning with salt and pepper. Reserve the extra dressing for later. Grill the chops over medium heat, cooking for approximately 3 minutes on each side until they develop a beautiful brown crust. Use a meat thermometer to ensure the internal temperature reaches 54°C. Rest the lamb chops on a plate for 5 minutes before serving.
  • In a large bowl, coat the beans with 1 tablespoon of oil and salt. Grill the beans on a barbecue tray over high heat for about 3 minutes until charred and tender. Transfer to a bowl, mix in tomatoes and remaining oregano dressing, and season with salt and pepper.
  • Present the lamb chops on a platter alongside the vegetables and lemon wedges as accompaniments.
