Elevate summer squash and corn with a unique and tasty twist!
Ingredients:
  • 2 tablespoons olive oil
  • 0.5 yellow onion, sliced
  • 4 cloves garlic, minced
  • 0.5 cup vegetable broth
  • 1 ear corn, kernels cut from cob
  • 2 cups sliced yellow squash
  • 2 cups sliced zucchini
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons butter
  • salt and pepper to taste
Instructions:
  • 1. In a skillet over medium-high heat, sauté onion and garlic in oil until slightly tender. Add vegetable broth and corn kernels, and simmer until heated through. Stir in squash and zucchini, cover, and cook for 10 minutes until tender, stirring occasionally.
  • Combine the parsley and butter with the squash in the skillet, season with salt and pepper, and cook, stirring, until the butter is melted. Serve hot.
