Thyme and lemon-infused roasted mushrooms - a crowd-pleaser, even for non-mushroom fans!
Ingredients:
  • 6 tablespoons salted butter, or more to taste
  • 16 large white mushrooms, stemmed
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh thyme
  • 1.5 tablespoons lemon juice
  • 2 tablespoons panko bread crumbs
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Melt butter in a large frying pan over medium heat. Place mushrooms cap-side down and cook until tender, around 10 minutes. Transfer to a baking dish, stalks facing up.
  • In a small bowl, combine garlic, thyme, lemon juice, salt, and pepper. Stir in the remaining butter from the pan and mix thoroughly. Spoon the mixture over the mushrooms and sprinkle with bread crumbs.
  • Roast in the oven at the perfect temperature for 10 to 12 minutes.
