Savor a satisfying breakfast burrito bursting with flavorful sausage, fluffy eggs, and gooey cheese for a delicious start to your day, no matter how hectic.
Ingredients:
  • 12 eggs
  • 0.66666668653488 cup milk
  • 2 tablespoons butter
  • 1 pound bulk pork sausage
  • 2 tablespoons minced garlic
  • 0.5 red onion, diced
  • 1 tomato, diced
  • 0.25 cup chopped fresh cilantro
  • 1 (3.5 ounce) can diced jalapenos
  • 1 (1 ounce) package taco seasoning
  • 1.5 cups shredded Cheddar cheese
  • 20 (6 inch) flour tortillas
Instructions:
  • Assemble all your ingredients.
  • In a large bowl, vigorously combine eggs, milk, and salt. Heat butter in a large skillet over medium-high heat. Add the egg mixture and cook, stirring continuously, until the eggs are fully cooked, about 5 minutes.
  • Fluff up cooked eggs into bite-sized pieces and transfer to a spacious bowl. Reserve for later.
  • In a large skillet over medium heat, cook and stir sausage and garlic for 5 minutes. Add onion and continue cooking and stirring until sausage is crumbly, evenly browned, and no longer pink. Drain any excess grease before serving.
  • Combine the sausage with the eggs in the bowl. Mix in the tomato, cilantro, jalapeños, and taco seasoning until fully incorporated. Let the mixture cool to room temperature before adding the Cheddar cheese and stirring it in.
  • Place a tortilla on your work surface. Spoon some egg filling halfway between the bottom edge and the center of the tortilla. Press the filling into a rectangular shape using the back of a spoon. Fold the bottom of the tortilla tightly over the filling, then fold in the left and right edges. Roll the burrito up towards the top edge to form a tight cylinder. Repeat the process with the remaining ingredients.
  • Wrap each burrito snugly with plastic wrap and freeze until serving.
  • Heat the burritos in the microwave until piping hot, for 3 to 4 minutes before serving.
