Southwestern brunch casserole with tortillas, green chiles, sausage, and cheese, baked to perfection in a fluffy egg mixture - perfect for entertaining.
Ingredients:
  • 1 (16 ounce) package bulk pork sausage with sage
  • 6 flour tortillas, cut into 1-inch squares
  • 4 (4 ounce) cans chopped green chilies
  • 2 cups shredded Monterey Jack cheese
  • 10 eggs
  • 0.5 cup milk
  • 0.5 teaspoon garlic salt
  • 0.5 teaspoon onion salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground cumin
  • 2 tomatoes (or to taste), sliced
Instructions:
  • 1. Start by heating a large skillet over medium-high heat. Cook and stir the sausage until it's browned and crumbly, which should take about 5 to 7 minutes. Remember to drain and discard any excess grease before moving on.
  • Prepare the baking dish by greasing it. Create a flavorful base by layering half of the tortilla pieces at the bottom of the dish, then add the 2 cans of green chilies, half of the cooked sausage, and half of the cheese. Repeat the layering process for added deliciousness.
  • Whisk eggs, milk, salt, garlic salt, onion salt, black pepper, and cumin in a bowl until well combined; pour evenly over the layers in the baking dish.
  • Chill the dish with plastic wrap in the refrigerator for 8 hours or overnight.
  • Take the dish out of the refrigerator and allow it to come to room temperature for 30 minutes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Bake the casserole in a preheated oven for 50 minutes. Top with tomato slices and bake for an additional 10 to 15 minutes until a knife inserted in the middle comes out clean. Allow the casserole to cool for 10 minutes before cutting.
