Mexican-inspired egg and bacon tortilla cups bursting with flavor!
Ingredients:
  • 6 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 12 eggs
  • 1/2 cup cooked bacon bits
  • 1/4 cup from 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 1/4 cup shredded Cheddar cheese (1 oz)
  • Green onion, chopped, if desired
  • Sour cream, if desired
  • Thick & chunky salsa, if desired
Instructions:
  • Preheat your oven to 350° F and generously spray 12 regular-size muffin cups with cooking spray.
  • Cut 2 rounds from each tortilla using a 4-inch round cookie cutter. Place the rounds on a microwavable plate and microwave uncovered on High for 15 seconds to soften. Press each round into a muffin cup using the bottom of a small glass.
  • In a spacious bowl, whisk eggs until light and fluffy. Gently mix in bacon bits. Heat a 10-inch skillet over medium-low heat and pour in the egg mixture. Cook the scrambled eggs until fluffy.
  • Spread a layer of 1 teaspoon of beans at the bottom of each tortilla-lined cup, then pour 1/4 cup of egg mixture into each cup. Sprinkle 1 teaspoon of cheese on the top of each cup.
  • Bake for 18 to 20 minutes, or until the cheese is bubbly and the tortillas are perfectly crispy.
  • Serve immediately after generously covering with the remaining ingredients.
