Family-friendly breakfast burritos with country gravy, made budget-friendly with bulk bacon, frozen turkey sausage, and Tater Tots®.
Ingredients:
  • 20 frozen bite-size potato nuggets (such as Tater Tots®)
  • 1 bunch green onions, white parts only, chopped
  • 2 tablespoons butter
  • 5 links frozen turkey sausage (such as Jimmy Dean®)
  • 5 slices cooked bacon, cut into pieces
  • 0.33333334326744 cup all-purpose flour
  • 2.5 cups milk
  • 3 teaspoons ground black pepper
  • 1 pinch cayenne pepper
  • 4 (9 inch) whole wheat flour tortillas
  • 8 thin slices Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Coat a large skillet with cooking spray and heat over medium-high heat. Beat eggs in a bowl, then pour into the skillet. Cook and stir until eggs are fully set, approximately 5 minutes.
  • Place the potato nuggets in a single layer on a baking sheet.
  • Bake until beautifully golden, about 17-19 minutes in the preheated oven.
  • Combine cold butter and fresh green onions in a saucepan.
  • Take sausage links out of plastic pouches and place them on a microwave-safe plate. Cover with a paper towel and microwave for 60 to 65 seconds until heated through.
  • Dice sausages and combine with the onion-butter mixture along with the bacon. Cook over medium heat until butter is melted, stirring occasionally. Gradually mix in flour until a paste forms. Slowly pour in milk while continuously stirring. Lower heat to a simmer; cook and stir until a thick gravy forms, approximately 5 minutes. Take off heat and blend in black pepper and cayenne pepper.
  • Place Cheddar cheese slices along the center of a tortilla on a microwave-safe plate. Top with a quarter of the scrambled eggs and 5 potato nuggets. Microwave for about 20 seconds until heated through. Spoon gravy down the center of the burrito and microwave for an additional 20-30 seconds. Roll one edge around the filling while warm and repeat to make 3 more burritos with the remaining ingredients.
