Delicious country sausage breakfast pizza with sausage gravy, scrambled eggs, and cheese on mini crusts.
Ingredients:
  • 1 (10 ounce) package mini 8-inch baked pizza crusts (such as Boboli®)
  • 0.25 cup sage pork sausage
  • 2 tablespoons butter, divided
  • 1 tablespoon all-purpose flour
  • 0.25 cup half-and-half
  • 0.5 teaspoon ground black pepper
  • 0.125 teaspoon onion powder
  • 3 large eggs
  • 3 tablespoons shredded Swiss cheese
  • 3 tablespoons shredded Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 400°F (200°C).
  • Lay out pizza crusts on a baking sheet.
  • Bake in the preheated oven for about 5 minutes until lightly browned. Remove and keep oven on.
  • Preheat a large skillet over medium-high heat. Brown the sausage by cooking and stirring for 5 to 7 minutes. Use a slotted spoon to transfer the sausage to a paper towel-lined plate to drain.
  • Lower the skillet heat to medium-low, then melt 1 tablespoon of butter. Add flour and stir until dissolved to create a roux, approximately 1 minute. Pour in the half-and-half, stirring to scrape up any browned bits from the skillet's bottom. Cook and stir until the mixture thickens, about 2 minutes. Season the gravy with pepper, salt, and onion powder to taste.
  • Add the drained sausage back to the skillet and toss it with the flavorful gravy. Take it off the heat and generously spread the sausage gravy over the pizza crusts.
  • In a nonstick saucepan over low heat, melt the remaining butter. Add eggs and cook until scrambled, stirring occasionally for 3 to 4 minutes. Remove from heat and distribute the scrambled eggs evenly over the pizzas. Sprinkle with Swiss cheese and Cheddar cheese.
  • Bake until cheese is bubbly and golden, about 3-4 minutes in the hot oven.
