Turmeric-infused rice and raisin stuffing adds vibrant flavor and color to a whole chicken.
Ingredients:
  • 2 tablespoons olive oil
  • 2 (2 to 3 pound) whole chickens
  • 3 cups cooked white rice
  • 1 cup raisins
  • 1 onion, chopped
  • 1 tablespoon ground turmeric
  • salt to taste
  • ground black pepper to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat 2 tablespoons of olive oil in a small skillet until hot. Saute the chopped onion, turmeric, and raisins. Add cooked rice and salt, then mix thoroughly.
  • Rub butter on the exterior of the chickens and season with a pinch of pepper. Fill both chickens with the rice mixture. Transfer to a greased 9x13 inch baking dish and bake in a preheated oven for around 1 hour, or until the chickens are golden brown and the juices run clear.
