Spiced rice pudding with a modern twist using cinnamon, cardamom, lemon, and raisins.
Ingredients:
  • 1040.00 gm gluten-free soy milk or gluten-free rice milk
  • 2 strips lemon peel (without pith, 2cm x 4cm)
  • 132.00 gm arborio rice or short-grain rice
  • 82.50 ml raisins or sultanas
  • 40.00 gm caster sugar
  • 1 cinnamon stick
  • 4 cardamom pods
Instructions:
  • In a medium saucepan, create a fragrant blend by simmering soy milk, cinnamon stick, cardamom pods, and lemon peel. Add rice and raisins to infuse with flavor.
  • Simmer gently with a lid askew for 20-25 minutes, stirring occasionally until the rice is tender and creamy.
  • Stir caster sugar into the pan until combined. Spoon pudding into serving bowls.
