Deliciously spiced baked rice pudding with raisins.
Ingredients:
  • 1.25 cups uncooked white rice
  • 1.5 cups white sugar
  • 0.5 cup butter, melted
  • 5 cups milk
  • 2 eggs, beaten
  • 0.5 teaspoon ground nutmeg
  • 0.75 cup raisins
Instructions:
  • Bring salted water in a saucepan to a boil. Stir in rice, then cover and cook over low heat for 20 minutes.
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Mix together the 2 1/2 cups of cooked rice, sugar, melted butter, milk, eggs, cinnamon, nutmeg, and raisins until well combined. Transfer the mixture into a 9x13 inch baking dish.
  • Bake until the top turns a beautiful golden hue, about 30 to 60 minutes. Enjoy warm or chilled.
