Creamy stovetop rice pudding infused with vanilla and cinnamon, chilled overnight for a luscious treat.
Ingredients:
  • 0.5 gallon milk
  • 1 cup uncooked long-grain white rice
  • 3 eggs, lightly beaten
  • 0.25 cup milk
  • 2 teaspoons vanilla extract
  • ground cinnamon to taste
Instructions:
  • In a large saucepan over medium-low heat, bring together 1/2 gallon of milk, sugar, and rice. Allow it to simmer covered for 1 hour, stirring occasionally. Remove from heat and let it rest for 10 minutes before serving.
  • Combine eggs, 1/4 cup milk, vanilla, and salt in a large bowl and whisk until fully incorporated.
  • Add the mixture to the rice and cook over low heat, stirring continuously, for 2 minutes.
  • Transfer the pudding into a 9x13-inch dish, cover with plastic wrap, and fold back the corners to release steam. Let the pudding cool to room temperature.
  • Unwrap the pudding and generously dust the top with aromatic cinnamon. Seal it tightly with a new layer of plastic wrap and let it chill in the refrigerator for 8 hours or overnight until ready to be enjoyed.
