Savory Mexican beef cooked in zesty salsa verde, served with rice, beans, and tortillas. Top with sour cream for extra creaminess.
Ingredients:
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 pound cubed beef stew meat
  • 1.5 teaspoons minced garlic
  • 0.5 lime, juiced
  • 1 jalapeno pepper, seeded and chopped
  • 3 green onions, chopped
  • 0.25 cup chopped fresh cilantro, or to taste
  • 1 teaspoon dried oregano
  • 1 (7 ounce) can green salsa
Instructions:
  • In a large skillet over medium-high heat, sauté the onion in olive oil until softened. Add the beef and garlic, and cook, stirring occasionally, until the meat is evenly browned.
  • Combine lime juice, jalapeno, cilantro, and green onion while the meat is cooking. Once the meat is browned, add the cilantro mixture and oregano. Pour in salsa, cover, and cook for approximately 10 minutes, stirring occasionally, until the meat is fully cooked.
