Creamy coconut rice pudding infused with rich coconut milk and extract, garnished with toasted shredded coconut for a delightful crunch.
Ingredients:
  • 1.5 cups water
  • 0.75 cup white rice
  • 1 (13.5 ounce) can coconut milk
  • 0.25 cup white sugar
  • 0.5 cup milk
  • 1 egg, beaten
  • 1 tablespoon extra-virgin coconut oil
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon coconut extract
  • 1 wedge fresh pineapple
Instructions:
  • In a saucepan, gently simmer rice with water until tender and liquid is absorbed, for 20 to 25 minutes.
  • In a pot, simmer rice with coconut milk, sugar, and salt until rich and creamy, approximately 20 minutes.
  • In a bowl, whisk together milk and egg. Add 1 to 2 tablespoons of rice mixture to the milk mixture and whisk to warm it up. Gradually pour the milk mixture into the rice mixture while whisking constantly. Cook and stir until the pudding is heated through, about 2 to 3 minutes.
  • Take the pot off the heat and mix in coconut oil, vanilla extract, and coconut extract into the pudding. Chill in the refrigerator for about 1 hour. Optionally, decorate the pudding with a pineapple wedge.
