Coconut rice pudding with fruit

Kids' favorite: Rich rice pudding with fresh fruit topping.
Ingredients:
  • 150g rice
  • 250ml milk
  • 250ml coconut milk
  • 4.40 gm vanilla essence or vanilla extract
  • 40.00 gm caster sugar
  • 20.00 gm butter
  • Sliced seasonal fruit, such as strawberries
Instructions:
  • In a saucepan, mix together rice, milk, coconut milk, vanilla essence, and 100ml water.
  • Bring the mixture to a boil, then simmer on low heat, stirring occasionally for 15-20 minutes until tender. Add more water if needed.
  • Combine the sugar and butter by stirring for 1 minute. Garnish with fresh seasonal fruit before serving.
