Coconut and saffron creamy rice

Indulgent coconut rice with plump sultanas: a comforting winter treat.
Ingredients:
  • Pinch of saffron threads
  • 560ml (2 1/4 cups) hot water
  • 310ml (1 1/4 cups) light coconut cream (Ayam brand)
  • 150g (3/4 cup) white long-grain rice
  • 75g (1/3 cup) caster sugar
  • 13.60 gm sultanas
Instructions:
  • Warm a medium saucepan over gentle heat. Introduce the saffron threads and cook for 15-20 seconds until fragrant.
  • Combine water and turn up the heat to medium-high. Mix in coconut cream, rice, sugar, and sultanas. Cook while stirring for 1-2 minutes until mixture boils.
  • Simmer the mixture uncovered on low heat, stirring occasionally, for 20 minutes until the rice is tender and the consistency is thick and creamy.
  • Serve immediately in individual serving bowls.
