Creamy coconut rice pudding with warm spices and juicy fruit; a decadent winter dessert.
Ingredients:
  • 3 cups water
  • 1.5 cups basmati rice
  • 3 cups coconut milk
  • 1.5 cups raw sugar
  • 0.5 teaspoon sea salt
  • 1 cup whole milk
  • 2 eggs, beaten
  • 0.25 cup unsalted butter
  • 1 tablespoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 (15 ounce) can sliced peaches, drained and chopped
  • 1 cup raisins, or more to taste
Instructions:
  • In a saucepan, bring the water and rice to a boil. Then, lower the heat to medium-low, cover, and let it simmer for about 20 minutes until the rice is tender and all the liquid is absorbed.
  • In a large saucepan, mix rice, coconut milk, sugar, and salt. Bring to a boil, then lower the heat and simmer until the pudding is thick and creamy for about 18 to 20 minutes. Stir in milk and eggs, continuously stirring for at least 2 minutes to prevent sticking.
  • Take the pudding off the heat and mix in butter, vanilla, cinnamon, and nutmeg until well combined. Gently incorporate peaches and raisins into the pudding and serve it warm.
