Create creamy coconut rice with coconut milk and sugar for a flavorful side dish, perfect to pair with curry.
Ingredients:
  • 1.5 cups long-grain white rice
  • 1 (14 ounce) can coconut milk
  • 1 teaspoon white sugar, or more to taste
  • 1 tablespoon shredded coconut, or to taste
Instructions:
  • Combine rice, coconut milk, and water in a saucepan, then incorporate sugar until dissolved.
  • Simmer the mixture until most of the liquid is absorbed by the rice, covering the saucepan and reducing the heat to medium-low. This should take about 15 to 20 minutes.
  • Allow the rice to steam in the residual heat on the turned-off burner until it reaches a sticky consistency, for 5 to 10 more minutes.
  • Sprinkle with shredded coconut for a tropical touch.
