Sweet Sticky Rice with Mangoes

Coconut sticky rice with sweet coconut sauce and fresh mango topping - a delectable Thai dessert.
Ingredients:
  • 2 cups uncooked glutinous (sticky) white rice, rinsed
  • 1 (13.5 ounce) can coconut milk, divided
  • 1 cup white sugar
  • 0.75 teaspoon cornstarch
  • 2 ripe mangoes, peeled and cubed
Instructions:
  • Soak the rice in fresh water for 30 minutes, then drain excess water until the rice is just covered by 1/4 inch of water.
  • Microwave the rice on High with a cover until water is mostly absorbed but the rice is still wet, about 10 minutes. Stir and continue cooking until almost dry, for an additional 4 minutes.
  • Combine half of the coconut milk with 1 cup of sugar in a bowl until the sugar is dissolved. Pour this mixture over the rice and stir until the rice is well coated. Cover and let the rice sit at room temperature for 20 minutes.
  • In a saucepan, whisk together the remaining 1/2 can of coconut milk with 1 tablespoon of sugar, salt, and cornstarch until smooth. Simmer the mixture over medium heat, whisking constantly, until thickened, about 2 minutes. Remove from heat and let it cool.
  • Spoon the fluffy rice into serving bowls, generously drizzle each with 2 tablespoons of the luscious coconut sauce, and garnish with multiple juicy mango pieces on top.
