Thai-inspired dessert: Purple sticky rice in sweet coconut milk, mango slices, toasted coconut.
Ingredients:
  • 0.5 cup light coconut milk
  • 0.5 cup granulated sugar
  • 1 cup black sticky rice
  • 0.25 cup light coconut milk
  • 0.25 cup shredded unsweetened coconut, divided
  • 2 mangos, sliced into lengthwise strips
Instructions:
  • In a bowl, combine 1/2 cup coconut milk, sugar, and salt. Whisk until the sugar dissolves and you have a smooth coconut sauce.
  • In a saucepan, mix together rice, water, 1/4 cup coconut milk, and 1 tablespoon shredded coconut. Simmer on medium heat, stir often for 10 minutes. Reduce heat to low and continue cooking until rice is sticky and soft, about 20-25 minutes.
  • Drizzle half of the luscious coconut sauce over the fluffy rice and gently mix with a fork. Pour the rest of the aromatic coconut sauce into the rice and combine thoroughly. Take the saucepan off the heat and allow it to sit until the rice has absorbed most of the flavors, typically about 15 minutes.
  • Toast the remaining shredded coconut in a skillet over medium-low heat, stirring occasionally, until lightly golden brown, for approximately 5 minutes.
  • Divide the rice mixture evenly among the serving bowls or plates. Top each serving with 4 to 5 slices of mango and a generous sprinkle of toasted coconut.
