Purple potato salad

Try this stunning potato salad with purple spuds for a unique and delicious twist.
Ingredients:
  • 6 tablespoons extra virgin olive oil
  • 1-2 lemons juice of, to taste
  • 250 g half fat crème fraîche or fromage frais
  • 500 g baby new potatoes
  • 500 g purple potatoes
  • 1 bunch radishes finely sliced
  • 1 handful fresh mint leaves chopped
  • 1 handful fresh chives chopped
Instructions:
  • Prepare the dressing by combining olive oil, lemon juice, and crème fraîche or fromage frais. Boil the potatoes in salted water for about 20 minutes until tender, then drain. Once cooled, peel and slice the potatoes into bite-size pieces. Toss them with the dressing, radishes, herbs, and season to taste.
