Delight loved ones with a stunning potato and crispy prosciutto salad.
Ingredients:
  • 1kg Purple Bliss potatoes, peeled, cut into 3cm pieces
  • 100g prosciutto slices
  • 3 spring onions, thinly sliced
  • 125.00 ml flat-leaf parsley
  • 1 lemon, zested, juiced
  • 28.60 gm honey
  • 11.80 gm Dijon mustard
Instructions:
  • Boil the potato in a large saucepan of water until tender, about 15 minutes. Drain and allow to cool slightly.
  • Heat a large non-stick frying pan over medium heat. Cook the prosciutto for 2 minutes on each side until crispy. Then transfer to a plate lined with paper towel to cool before breaking into small pieces.
  • In a large bowl, mix together the potato, prosciutto, spring onion, parsley, and lemon zest. In a small bowl, whisk together the lemon juice, honey, oil, and mustard. Drizzle the dressing over the potato mixture and toss gently to combine. Season to taste before serving.
