Prepare this quick and flavorful dish and be amazed!
Ingredients:
  • 600g potato
  • 375g sausage
  • 81.68 gm whole-egg mayonnaise
  • 42.00 gm lemon juice
  • 100g baby spinach
  • 4 hard-boiled eggs, peeled, quartered
Instructions:
  • In a large saucepan, submerge the potatoes in cold water. Bring to a boil over medium-high heat, then simmer on medium for 15 to 17 minutes until tender. Drain and cut into quarters before transferring to a large bowl.
  • Heat a greased chargrill pan over medium-high heat, then cook the sausages for 10 to 12 minutes, turning occasionally, until they are cooked through. Remove from the pan and thinly slice diagonally.
  • Combine creamy mayonnaise with freshly squeezed lemon juice in a bowl, then season generously with a pinch of salt and a sprinkle of black pepper.
  • Combine sausage and spinach with the potato mixture, pour over the dressing, toss everything together, then add the egg and serve.
