Warm sausage, potato and spinach salad

Whip up a quick and delicious sausage and potato salad for a speedy meal.
Ingredients:
  • 400g packet baby potatoes with butter and herbs (see note)
  • 500g Italian beef sausages
  • 100g baby spinach
  • 82.50 ml balsamic dressing
  • 187.50 ml pitted black olives
  • 62.50 ml pine nuts, toasted
Instructions:
  • Prepare the potatoes according to the package instructions until they are just tender. Allow them to cool for 5 minutes before proceeding.
  • Heat a chargrill pan over medium-high heat. Cook sausages for 10 minutes, turning occasionally, until browned and fully cooked. Transfer to a plate and let them cool for 5 minutes before slicing diagonally.
  • Slice the potatoes into thick pieces. Place the spinach, potatoes, and sausage on plates. Drizzle with salad dressing, then sprinkle with olives and pine nuts. Season with pepper and serve with crusty bread.
