Elevate your sausages with a delicious, budget-friendly salad for under $3.50 per serving.
Ingredients:
  • 4 small chat potatoes, halved
  • 8 (375g packet) extra lean Italian-style sausages
  • 1 Lebanese cucumber
  • 2 baby cos lettuce hearts, leaves separated, torn
  • 1/2 small red onion, thinly sliced
  • 250g cherry tomatoes, halved
  • 1/2 tsp cracked black pepper
  • 18.20 gm extra virgin olive oil
  • 40.00 ml red wine vinegar
  • Crusty bread, to serve
Instructions:
  • In a large saucepan, simmer the potato in cold water until just tender, about 10 to 12 minutes. Drain and cool under cold water.
  • Preheat a greased barbecue plate or chargrill on medium-high heat. Cook sausages, turning occasionally, for 8-10 minutes until browned and fully cooked. Transfer to a plate and loosely cover with foil to keep warm.
  • Create cucumber ribbons using a vegetable peeler. Combine lettuce, cucumber ribbons, onion, tomato, and potato in a large bowl. In a screw-top jar, combine pepper, garlic, oil, and vinegar. Secure the lid and shake well to mix.
  • Cut sausages into thick diagonal slices and add them to the lettuce mixture. Finally, drizzle dressing over the top.
  • Combine the ingredients by tossing them together. Enjoy the salad with some delicious crusty bread on the side.
