Family-friendly sausage and lentil salad with tangy goat cheese and lemon zest.
Ingredients:
  • 150g bacon, chopped
  • 1 brown onion, finely chopped
  • 1 celery stick, finely chopped
  • 1 medium carrot, peeled, finely chopped
  • 1 red capsicum, seeded, finely chopped
  • 2 x 400g can brown lentils
  • 250.00 ml flat-leaf parsley leaves, chopped
  • 100g Marinated Goat Cheese
  • 20.00 ml red wine vinegar
  • 1 lemon, zested
  • 560g sausage
Instructions:
  • Heat oil in a large heavy-based frying pan over medium heat. Cook bacon until golden, about 5 minutes. Add onion, celery, carrot, and capsicum; cook until vegetables are tender, about 5 minutes. Stir in garlic and cook for 1 minute.
  • Combine lentils and vinegar in the pan and cook for 5 minutes or until heated through. Remove from heat and mix in the parsley. Season with salt and pepper, then add goat's cheese and lemon zest. Gently toss to combine.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill sausages, turning occasionally, until fully cooked, about 5-8 minutes.
  • Plate the lentil braise, then crown it with the sausages.
