Ingredients:
  • 16 chipolata sausages
  • olive oil cooking spray
  • 2 zucchini
  • 3 baby eggplants
  • 2 large red capsicums, cut into 1cm-thick strips
  • 8 cherry tomatoes, halved
  • 375.00 ml baby spinach leaves
  • 190g jar basil pesto (see note)
Instructions:
  • Preheat a barbecue plate or chargrill over medium heat. Lightly coat sausages with oil and cook, turning frequently, for 6 minutes, or until golden brown and fully cooked.
  • Slice zucchini and eggplant into 1cm-thick strips. Spray with oil, season with salt and pepper, then cook for 8 minutes, turning occasionally until tender.
  • Assemble spinach, sausages, chargrilled vegetables, and tomatoes on plates, then drizzle with pesto and season with salt and pepper.
