Ingredients:
  • olive oil cooking spray
  • 500g beef sausage
  • 250.00 ml couscous
  • 250.00 gm boiling water
  • 125g can chickpeas, drained, rinsed
  • 1 red capsicum, cut into 1cm pieces
  • 1 small red onion, halved, thinly sliced
  • 250.00 ml fresh flat-leaf parsley leaves
  • 125.00 ml raisins
  • 56.88 gm olive oil
  • 65.63 gm lemon juice
  • 1 garlic clove, crushed
  • 2.50 gm ground cumin, (see note)
Instructions:
  • Lightly oil a large, non-stick frying pan and heat over medium-high heat. Cook sausages, turning occasionally, for 8 to 10 minutes until browned and fully cooked. Transfer to a chopping board and slice thickly.
  • In a heatproof bowl, combine couscous with boiling water. Cover and let stand for 5 minutes until liquid is absorbed. Fluff with a fork to separate the grains.
  • Combine sausages, chickpeas, capsicum, onion, parsley, and raisins with couscous. Mix oil, lemon juice, garlic, and cumin in a jug. Season with salt and pepper. Drizzle dressing over salad, toss to mix, and serve.
