Flavorful and waistline-friendly pasta salad.
Ingredients:
  • 9.20 gm olive oil
  • 500g lean pork sausages
  • 375.00 ml small pasta shapes (such as shells)
  • 5 green onions, thinly sliced
  • 2 garlic cloves, crushed
  • 250g cherry tomatoes, quartered
  • 375.00 ml frozen peas
  • 63.75 gm salt reduced chicken style liquid stock
  • 100g baby spinach
Instructions:
  • In a large non-stick frying pan, heat 1 teaspoon of oil over medium heat. Add sausages and cook for 12 to 15 minutes, turning occasionally, until cooked through. Transfer to a cutting board, slice thinly, and set aside.
  • Cook the pasta in a large pot of boiling salted water according to the package instructions until tender, about 8 minutes.
  • In a saucepan over medium heat, heat the remaining oil. Add onions and garlic, cook and stir for 2 to 3 minutes until soft. Add tomatoes, peas, and stock. Increase heat to medium-high and cook for 2 minutes. Remove from heat.
  • After draining the pasta, transfer it back to the pan. Introduce the sausages, onion mixture, and spinach. Season with salt and pepper, then toss everything together. Finally, plate and serve.
